Roasted Garlic-Rosemary Chicken
This Roasted Garlic-Rosemary Chicken is easy to prepare, bursting with flavor, and features three of my favorite ingredients: garlic, rosemary, and lemon. Truly delightful!

Preheat your oven to 250 degrees F.

Lay onion slices evenly in a large baking dish, then place the chicken on top.

Mix the remaining ingredients and rub the mixture over the chicken. Cover the chicken with foil and roast for 3 hours.

Remove the foil and baste the chicken with the pan juices. Return to the oven for an additional hour.

Baste once more, then return to the oven for another hour. Repeat this process until the chicken reaches an internal temperature of 165 degrees F.

Once fully cooked, allow the chicken to rest for 10 minutes. Meanwhile, pour the collected juices into a saucepan and simmer until reduced by half, about 8-12 minutes. Drizzle over the chicken before serving.

Heat the oven to 250 degrees F.

Combine the remaining ingredients and rub the seasonings over the chicken, then tent the chicken in foil and roast for 3 hours.

Remove the foil and baste the chicken with the juices at the bottom of the pan. Return to the oven for 1 hour.

Baste again, then return to the oven for 1 hour. Repeat until the chicken reaches 165 degrees F inside, if it hasn’t already.

When the chicken is done, let rest 10 minutes. Meanwhile, pour the juices into a saucepan and bring to a simmer. Reduce by half, 8-12 minutes, and pour over chicken to serve.
